Zucchini Muffins

Ingredients

Wet
1 cup canola oil
3 eggs
1 tsp vanilla
2 cups grated zucchini

Dry
2 cups sugar
3 cups flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
2 tsp cinnamon
3/4 cup chocolate chips
1/2 cup nuts (optional)

Instructions

1) Preheat oven to 375 degrees
2) Mix wet and dry ingredients in two separate bowls.
3) Add wet to dry.
4) Add to muffin pan and bake at 375 degrees for 15-20 min.
